Our Story

Husband and wife team Matt and Nicole Sileno were on their honeymoon in April of 2017 when they took a hard look at the quality of their lives.

They quickly realized they were not chasing their dreams and decided it was time for big changes. They had been visiting Williamsburg for the past five years for Nicole’s birthday to enjoy a meal at their favorite restaurant, the Fat Canary and fell in love with everything about the area. To them it was a no-brainer they wanted to live near Williamsburg instead of Northern Virginia, so they worked with Wendy Walker and Matthew Gonzalez of the Wendy Walker Realty team and made their new home in Toano.

Matt has always loved to cook since he was a kid, and was fortunate to have parents that were both great cooks and showed him the ropes in the kitchen. His love for barbecue came when he lived in small town Goldsboro, North Carolina and it continued to grow throughout the years. Matt bought his first smoker in 2015 and was smokin’ barbecue every chance he could find.

Matt says he and Nicole ate some pretty bad barbecue in those early days, but eventually he figured out the secrets to low and slow smoked barbecue. Once he was consistently cooking a product that he was confident in serving to the masses, Matt and Nicole bought the food truck that catered their wedding back in March of 2017 and thus began the Matchsticks BBQ Co. They both love interacting with the community and are grateful each and every day for the support they have received to dream together and grow their family business. What’s next for Matt and Nicole? Their goal is to move into a brick and mortar location while still using the food truck to provide catering as well as continue to cook at popular locations in the Williamsburg, Richmond, and Newport News areas. The recipe for great barbecue is part art, part science and part sleep deprivation. Five nights a week, Matt Sileno wakes up every hour to check on his smoker over a 14-hour cooking period, making sure the temperature stays constant and precise to produce a clear smoke for flavoring. “Otherwise, you can get a chemical taste on the meat,” Matt says. “I’m a big stickler about it. I baby my smoker. A lot of people think you can just light up some wood, throw the meat on and let it ride, but barbecue is a really hard craft. No cook is the same. It takes a lot of steps, time and patience.”

When Matt and Nicole Sileno got married at the Stone Tower Winery in Leesburg in March 2017, they had their big day catered by an award-winning food truck named Cured.

Their friends and family enjoyed beet salad, macaroni and cheese, pork belly and a short-rib dish with a view of rolling countryside.

The couple stayed in touch with the caterers, even as they began making plans to open their own food truck in Williamsburg. When Cured owners Jeremy Thrasher and Tarek Kipry announced they were taking jobs as restaurant chefs in Washington, the Silenos reached out and made them an offer.
